Baked Potato Wedges
Potatoes sliced into wedges, seasoned and roasted until a golden brown. This is a simple and basic recipe that can be spiced up any way you like it!
Ingredients:
- 3 medium baking potatoes
- 2 tbs of olive oil or canola oil
- 2 large garlic cloves, minced
- 1 tsp of kosher salt
- 1/4 tsp of black pepper, freshly ground
Directions:
- Preheat oven to 400 degrees.
- Scrub the baking potatoes clean and pat dry. Be sure the potatoes are dry.
- Cut each potato in half lengthwise. Then cut each half lengthwise again in fourths.
- In a large bowl combine oil, minced garlic, salt and pepper.
- Place potatoes in the bowl. Combine the ingredients until the potatoes are well coated.
- Lay potatoes on a large baking or cookie sheet, skin side down and the cut edges facing up.
- Bake for 45-60 minutes until the edges start to turn golden brown.

You can add many different herbs and seasonings to this recipe such
as fresh chopped rosemary, thyme, parsley, paprika, cayenne pepper, etc.
- The key to this recipe is having your slices skin side down and the cut edges facing up. Both sides cook evenly, the potatoes don't stick to the pan and you don't have to turn them over halfway through cooking.
Tips:
- Line the pan with tin foil or parchment paper for easy cleanup.
