Beef Flavored Rice
This recipe is a very simple side dish. It is not necessarily the star of the show. However, it is a great compliment to a meal without competing with the main entree. I like to make this with Sake Steak or Sake Chicken, with a simple green salad served with ginger dressing. Yum!
Ingredients:
- 1 cup of white rice
- 1 14.5 oz can beef broth
- 2 tbs minced fresh parsley
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground
- 2 tbs butter
- water
Directions:
- Empty beef broth into a 2 cup measuring cup. Add enough water to the broth to equal 2 cups.
- In a saucepan, add the beef broth and water. Bring to a boil.
- Add the rice, tightly cover and reduce the heat to low. Simmer for 20 minutes.
- Remove cover from saucepan and ensure all liquid has been absorbed. If liquid still remains, continue to cook covered on low until all liquid is gone.
- Remove from heat, let rest covered for 5 minutes. Remove lid and fluff up with a fork.
- Add fresh parsley, salt, pepper and butter. Allow butter to melt in the rice, then stir. Test for seasonings, add more if necessary.
- Serve.
Comments:
- I like adding the butter at the very end because it adds a very nice gloss to the rice.
Tips:
- Mince (finely chop) the parsley first and then measure the 2 tbs.
Variations:
- Add some finely chopped carrots and green onions when adding the beef broth to the sauce pan. Omit parsley.
