Black Bean Soup
Ingredients:
- 3 15 oz cans black beans, undrained
- 2 10 oz cans of Rotel
- 1 14.5 oz can chicken or vegetable broth
- 1 medium onion, chopped small
- 3 tsp ground cumin
- 1 tbs olive oil
- 1 lime, juice
Directions:
- In medium saucepan add olive oil, chopped onions and cumin. Cook until onions are tender.
- Add the broth and one can of black beans to the saucepan.
- In a blender add the last two cans of the black beans and blend until smooth. Add to saucepan.
- Stir in the 2 cans of Rotel and lime juice.
- Bring to a gentle boil and simmer for 30 minutes.
Comments:

We use chicken broth.
- Top each serving with sour cream if you desire.
- You can replace the Rotel with equal amount of salsa.
