Black Bean Soup

Black Bean Soup

Ingredients:

  • 3 15 oz cans black beans, undrained
  • 2 10 oz cans of Rotel
  • 1 14.5 oz can chicken or vegetable broth
  • 1 medium onion, chopped small
  • 3 tsp ground cumin
  • 1 tbs olive oil
  • 1 lime, juice

Directions:

  1. In medium saucepan add olive oil, chopped onions and cumin. Cook until onions are tender.
  2. Add the broth and one can of black beans to the saucepan.
  3. In a blender add the last two cans of the black beans and blend until smooth. Add to saucepan.
  4. Stir in the 2 cans of Rotel and lime juice.
  5. Bring to a gentle boil and simmer for 30 minutes.

Comments:

- We use chicken broth.

- Top each serving with sour cream if you desire.

- You can replace the Rotel with equal amount of salsa.
