Buckeyes
These are melt in your mouth chocolate covered peanut butter balls.
Ingredients:
- 1 16oz box of confectioners sugar
- 1 cup creamy peanut butter
- 1 cup (2 sticks) butter, melted
- 2 graham crackers, crushed very finely (1/4 cup)
- 1 tbs unsweetened cocoa
- 1 tsp vanilla extract
- 1 12oz pkg semi-sweet chocolate chips
- 1/2 block paraffin wax, optional
Directions:
- Mix the first 6 ingredients together with a fork until creamy in a large mixing bowl.
- Shape candy into 1" balls. Place peanut balls on wax paper lined baking sheet (or greased baking sheet). Refrigerate until well chilled and firm.
- Melt chocolate chips and wax in double boiler until completely melted.
- Insert toothpick into peanut butter ball. Dip in melted chocolate leaving the very top uncovered to resemble a buckeye nut.
- Place chocolate side down on wax paper lined baking sheet to allow chocolate to set.

Paraffin wax can be usually found in the canning section of your
grocery store. I like to use this when making candy because it makes
it easier to coat your candies. It makes the chocolate more liquid.
It also hardens the chocolate better and keeps the candy
from melting in your hands. If you can't find paraffin wax, you can
simply melt the chocolate chips without the wax and/or add a little
bit of shortening. Add about 2 tbs shortening for each 12 oz bag of
chocolate chips.
Tips:
- Place the graham crackers in a plastic bag to crush finely with a rolling pin.
- Be sure to refrigerate the peanut balls before coating them in the melted chocolate. Otherwise, they start to fall apart when coating them.
This is a picture of buckeyes. In comparison to the candy, the dark part of the nut is your chocolate and the light colored is the peanut butter.
