Chicken Caesar Wraps
Very easy recipe that is great for lunch or a light dinner. Serve with fresh fruit and you have a complete meal. What I like about this meal is that if someone is watching their carbs, they can simply omit the tortilla and make a salad out of the prepared ingredients or a side salad and sliced chicken.
Ingredients:
- 2 boneless and skinless chicken breasts, about 1 lb
- 4 cups of Romaine lettuce, chopped into bite size pieces
- 1/4 cup of grated parmesan cheese (freshly grated if possible)
- 2 garlic cloves, minced
- 2 tbs olive oil
- 1/4 tsp Italian seasoning
- 1/4 tsp oregano
- 1/2 tsp kosher salt
- 1/4 tsp black pepper, freshly ground

4 - 8'" soft flour or wheat tortillas - 1/2 cup Caesar salad dressing, (creamy or traditional)
Directions:
- Lightly pound chicken breasts until they are even in thickness between 2 sheets of plastic wrap or in a large storage bag. You just want to make the chicken breasts even in thickness so they will cook evenly and to avoid overcooking.
- In a small bowl, combine the minced garlic cloves, Italian seasoning, oregano, salt and pepper.
- Rub the seasoned garlic on both sides of the chicken breast and allow to rest at room temperature for 5 minutes or so.
- While the chicken is resting, heat a sauté pan on medium heat until good and hot. Add the olive oil to the pan and heat.
- Add chicken to the sauté pan and cook for about 4 to 5 minutes on each side until chicken is cooked through and no longer pink. Remove pan from heat and allow the chicken to cool in the pan.
- While chicken is cooling, in a large bowl combine the chopped lettuce and parmesan cheese. Add 1/4 cup of the Caesar dressing and combine with the lettuce. Add more or less of the dressing as desired.
- Remove chicken from the pan and slice into thin strips.
- Place 1/4 of the sliced chicken and 1/4 of the salad mixture on one end of the tortilla, fold in sides and carefully roll up. Place tortilla seam side down and cut in half on a diagonal. Serve with remaining salad dressing on the side.
Comments:
- You can also grill the chicken
or use a grill pan if you
desire. If grilling, use only 1 tbs of the olive oil and add it to
the seasoned garlic and then rub on chicken. Allow to marinate for

- 15 minutes before grilling.
Tips:
- I like to buy the prewashed and bagged Romaine lettuce if I want to make the meal in a hurry.
- Using precooked chicken such as a rotiserrie chicken will save on time.
Variations:
- Add any of the following:
- Crumbled croutons
- Olives such as kalamata, black, or green olives
- Red onions
- Tomatoes
- Use Italian or Ranch salad dressing instead of Caesar.
