Chicken Marbella

1The combination of prunes, green olives, and capers will turn many heads away as it did me. However, this dish is excellent and is surprisingly well liked among everyone in our family including the kids. It is very easy to make and is a great recipe for a busy family.

Ingredients:

  • 3 - 4 chicken breasts, boneless and skinless, cut in half
  • 3 garlic cloves, minced
  • 8 prunes, pitted and chopped
  • 8 pimento stuffed green olives
  • 1/4 cup brown sugar
  • 2 tbs capers, with liquid
  • 2 tbs olive oil
  • 2 tbs red wine vinegar
  • 1/4 cup white wine
  • 2 bay leaves
  • 2 tsp dried oregano
  • 1 tsp salt or kosher salt
  • 1/4 tsp fresh ground pepper

Directions:

  1. Place all ingredients except for chicken in a large resealable plastic bag that has been placed in a bowl. Stir ingredients.
  2. Add chicken, seal and marinate overnight in refrigerator.
  3. Empty contents into 9" x 13" baking dish.
  4. Bake in preheated 350 degree oven for 45 minutes, basting several times. Cook until chicken is tender.

Comments:

- I have to admit, if I saw this recipe without eating it first, I would never have made it. However, it is very tasty and easy! I think the kids like it because of the sweetness (brown sugar and prunes). Yet it is not too sweet.

- By marinating overnight, all of the flavors meld together and you don't necessarily notice any single ingredient. You don't realize there are prunes in it.

Tips:

- Prepare two of these meals at the same time, and before cooking...place one in the freezer for a meal at a later time.
