Chicken Tortilla Casserole

Chicken Tortilla CasseroleSo easy and very tasty! The chicken can easily be replaced with cooked ground beef or ground turkey. This recipe is much easier than rolling them into enchiladas, but has the same great taste. Also, corn tortillas are healthier than the flour tortillas, but flour tortillas can be used instead.

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 (8 oz) can tomato sauce
  • 1 cup of mild tomato salsa
    1 (4 oz) can chopped green chilies, undrained
  • 4 green onions, white and green part, sliced
  • 1 garlic clove, minced
  • 1 tbs chili powder
  • 1 tbs chopped fresh cilantro, optional (not necessary)
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground

    2 cups cheddar cheese, shredded
  • 12 corn tortillas or flour tortillas - 6" size (small size)

Optional Garnishment:

  • Sour Cream
  • Sliced Black Olives
  • Chopped green onions

Directions:

  1. Preheat oven to 350 degrees. Lightly grease a  9" x 13" baking dish.
  2. In a large mixing bowl, combine the first 12 ingredients.
  3. Layer 1 - Place 1/3 of the chicken mixture in the greased baking dish. Top with 6 tortilla shells. Overlap the tortilla shells as necessary.
  4. Layer 2 - Place 1/3 of the chicken mixture on top of the top of the tortilla shells. Sprinkle with 1/2 of the cheddar cheese. Top with 6 tortilla shells.
  5. Layer 3 - Place the final 1/3 of the chicken mixture on top of the top of the tortilla shells. Sprinkle with the last of the 1/2 of the cheddar cheese.
  6. Bake uncovered for 30 minutes.
  7. Allow the casserole to sit for 5 minutes before serving.
  8. Slice into squares topped with a dallop of sour cream, sliced black olives, and some chopped green onion if desired. Like it spicey? Add sliced fresh or pickeled jalapenos.

Comments:

- Baked rotisserie chicken is great for this recipe.

-  I like to use Tostito All Natural Salsa or Paul Neuman's salsa.

Tips:

- The salsa can be replaced with another 8 oz can of the tomato sauce for simplicity.

Variations:

- Replace chicken with 1 pound of cooked ground beef or ground turkey.

- Add corn, black beans, or pinto beans to the mixture.

- Add a pinch or two of red pepper flakes or cayenne if you like it spicier.
