Chicken with Tzatziki Sauce

Chicken with Tzatziki Sauce, Tzatziki SauceThis chicken recipe is very healthy and easy to make. Serve with warmed pita bread or flatbread, sliced fresh tomatoes, cucumbers, onions and you have a complete meal. We have also served them up in flour tortillas and they were wonderful.

Ingredients:

  • 6 - 8 boneless and skinless chicken thighs
  • 2 tbs olive oil
  • 2 tbs lemon juice, freshly squeezed
  • 2 tsp dried parsley
  • 1/2 tsp paprika
  • salt and pepper

    flat bread or pita bread


  • Quick Tzatziki Sauce (cucumber sauce):

  • 2 (6 oz) containers of plain yogurt (drained of excess liquid) or plain Greek yogurt
  • 1 medium cucumber, peeled and seeded, chopped finely
  • 1 garlic clove, minced
  • 1 tbs lemon juice, freshly squeezed
  • 1/4 tsp salt
  • dash of pepper
  • 3-4 mint leaves, minced (optional...not necessary)

Directions:

  1. In a medium bowl, combine olive oil, lemon juice, parsley and paprika. Season with some salt and pepper. Set aside.
  2. Rinse and pat dry chicken thighs, cut each thigh in half.
  3. Add chicken to ingredients in bowl. Marinate at room temperature for 15 to 20 minutes. If you marinate any longer than this, place in the refrigerator to marinate.
  4. While chicken is marinating, combine all of the Tzatziki Sauce ingredients in a small bowl and mix well. Place in refrigerator to chill.
  5. After chicken has marinated, heat a large skillet on medium high heat. Heat a little olive oil in the pan.
  6. Add chicken to the skillet, shaking off excess liquid. Cook chicken on each side for 3 to 4 minutes, until golden brown. Turn temperature down to low, cover and simmer for about 5 to 10 minutes until chicken is cooked thoroughly and is fork tender.
  7. Remove chicken from pan and serve with tzatziki sauce and warmed flatbread or pita bread.

Comments:

- You can use chicken breasts in this recipe, however, I would slice the breasts into smaller pieces.

- You can also grill the chicken if you desire.

- If someone in the family doesn't like the tzatziki sauce, serve with sour cream.

Tips:

-  Press down and roll the lemon on your counter before you squeeze or juice it. This will soften the fruit and releases the juices easier.
