Chicken with White Barbecue Sauce

My friend Katy passed Southern Living's, Grilled Chicken Thighs with White Barbecue Sauce recipe to me. I have adapted this wonderful recipe for our family as below. It can be prepared the day before and either popped into the oven, pan grilled or grilled outdoors. Very easy and delicious! It's a keeper!
Ingredients:
- Chicken and Rub:
- 10 boneless chicken thighs or 6 chicken breasts (bone in)
- 1 tbs dried thyme
- 1 tbs dried oregano
- 1 tbs ground cumin
- 1 tbs paprika
- 1 tsp onion powder
- 1/2 teaspoon salt
- 1/2 tsp black pepper, freshly ground
- 1 tbs olive oil

White Barbecue Sauce: - 3/4 cup mayonnaise
- 2 tbs white wine vinegar
- 1 small garlic clove, minced
- 1 1/2 tsp coarse ground pepper
- 1 1/2 tsp spicy brown mustard
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 tsp horseradish
Directions for Chicken and Rub:
- Combine all of the spices of the chicken rub together in a small bowl.
- Rinse chicken and pat dry.
- Sprinkle and rub both sides of chicken with spice mixture.
- Place chicken in a 9" x 13" dish and refrigerate for 4 hours or longer.
- Remove chicken from refrigerator. Heat oven to 400 degrees.
- Bake for 30-40 minutes until internal temperature reaches 170 degrees.
- Serve with White Barbecue Sauce.
White Barbecue Sauce:
- Combine all White Barbecue Sauce ingredients in a small bowl or container. Cover and refrigerate at least 4 hours. I like making it a day ahead of time to allow the flavors to meld and the vinegar to mellow.
- Serve the sauce as a dipping sauce on the side.
Comments:
- I halved the
original white barbecue sauce recipe because we had a
lot left over for our family of five.
- You may also grill the chicken outdoors or use a grill pan instead of baking in the oven.
Tips:
- This is a great make ahead meal for a weekday dinner.
