Chili

Chili, Best ChiliChili is wonderful meal on a cold winter's day. With all of the spices, this chili recipe will warm you up. Serve with a dollop of sour cream, freshly shredded cheese and freshly chopped cilantro.

Ingredients:

  • 1 1/2 pounds of ground meat
  • 1 (29 oz) can of tomato sauce
  • 1 (28 oz) can of diced tomatoes
  • 1 (28 oz) can of crushed tomatoes
  • 1 can light red kidney beans, drained
  • 1 can dark red kidney beans, drained
  • 1 can pinto beans, drained
  • 2 small cans of green chilies
  • 1 medium Vidalia onion (or sweet onion), chopped small
  • 2 cloves of garlic, minced
  • 2 tbs chili powder
  • 1 tbs olive oil
  • 1 tsp salt or kosher salt
  • 1 tsp black pepper, freshly ground
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • few dashes of Cayenne pepper

Directions:

  1. In a large Dutch oven or large saucepan, add olive oil and cook ground meat on medium heat just until brown. Break up the ground meat into small pieces while cooking.
  2. Add onions and garlic to the ground meat. Cook about 5-10 minutes until onions are tender. Drain fat.
  3. Add all remaining ingredients, cover and simmer for an hour or longer.

 or Slow Cooker/Crockpot Method:

  1. In a large skillet add olive oil and cook ground meat on medium heat just until brown. Break up the ground meat into small pieces while cooking.
  2. Add onions and garlic to the ground meat. Cook a few minutes until onions are tender. Drain fat and place in slow cooker.
  3. Add all remaining ingredients to slow cooker, cover and cook on low for at least an hour up to 8 hours.

Comments:

- This recipe makes a large pot of chili. You can halve the recipe for a small family.

- Even though there are a lot of ingredients, it is still an easy recipe because most of the ingredients your just adding them into the pot.

-  Green chilies are found in the Mexican isle or where they sell ethnic foods.

Tips:

- You can freeze any leftovers for a second meal.
