Chocolate Almond Balls
They taste similar to Almond Joy candy bars, which are one of my husband's favorite candy. I think that is why he loves these sweet morsels.
Ingredients:
- 2 16oz box of confectioners sugar
- 1 14oz bag sweetened shredded coconut
- 1 14oz can sweetened condensed milk
- 1 1/2 cup chopped almonds
- 1 cup (2 stick) butter, softened
- 1 tsp pure almond extract
1 12oz bag semi-sweet chocolate chips- 1/2 block paraffin wax
Directions:
- Cream together sugar and butter in a bowl; add canned milk
- Stir in almond extract, coconut and nuts; mix well. Refrigerate for about 15 minutes or so until the mixture firms up.
- Shape candy into 1" balls. Please coconut balls on wax paper lined baking sheet (or greased baking sheet). Refrigerate until well chilled and firm.
- Melt chocolate chips and wax in double boiler until completely melted.
- Insert toothpick into coconut ball. Dip in melted chocolate..
- Place dipped candy on wax paper lined baking sheet to allow chocolate to set.

Paraffin wax can be usually found in the canning section of your
grocery store. I like to use this when making candy because it makes
it easier to coat your candies. It makes the chocolate more liquid.
It also hardens the chocolate better and keeps the candy
from melting in your hands. If you can't find paraffin wax, you can
simply melt the chocolate chips without the wax and/or add a little
bit of shortening. Add about 2 tbs shortening for each 12 oz bag of
chocolate chips.
Tips:
- Be sure to refrigerate the coconut balls before coating them in the melted chocolate. Otherwise, they start to fall apart when coating them.
