Chocolate Éclair Dessert

1This is a great recipe for the kids. It has graham crackers on the bottom and a French vanilla pudding mixture in the middle. Then it is topped with another layer of graham crackers with a final layer of chocolate.

Ingredients:

  • 2 pkgs whole graham crackers
  • 2 small pkgs instant vanilla pudding, French vanilla
  • 3 cups milk
  • 1 8-oz pkg Cool Whip, defrosted

  • Frosting:
    1 1/2 cups confectioner's sugar
  • 2 blocks unsweetened baking chocolate, melted and cooled
  • 3 tsp Karo white corn syrup
  • 3 tbs milk
  • 3 tbs butter
  • 1 tsp vanilla extract

    or store bought chocolate frosting

Directions:

  1. Butter the bottom of a 9" x 13" dish or pan.
  2. Line bottom of dish with one package of graham crackers.
  3. Beat 3 cups of milk with pudding and mix for 2 minutes.
  4. Fold in Cool Whip.
  5. Carefully place pudding mixture on top of graham crackers.
  6. Place the second pack of graham crackers on top.
  7. Frost the top graham crackers with the chocolate frosting recipe or store bought frosting.
  8. Refrigerate at least an hour before serving.

Frosting

  1. Beat all frosting ingredients together until smooth.
  2. If using store bought frosting, heat in the microwave to soften the frosting. This makes it easier to frost the graham crackers.

Comments:

- The frosting takes more work than store bought frosting, but I think it is well worth it.

Tips:

- The frosting is just enough, so just use small dallops when spreading it on. If need be, microwave just for a little bit to soften the frosting to make it easier to spread, if required .
