Coleslaw Like KFC

1My favorite coleslaw is from Kentucky Fried Chicken. I love the combination of sweetness and tangy. This is a recipe that has circulated around the internet time and time again and is one of my favorite Copy Cat recipes. It is also a favorite when serving to guests.

Ingredients:

  • 1 head of green cabbage, diced finely
    1 whole carrot, shredded
  • 2 tbs minced onions

Dressing Ingredients:

  • 1/2 cup mayonnaise
  • 1/3 cup granulated sugar
  • 1/4 cup buttermilk or light buttermilk
  • 1/4 cup milk
  • 2 tbs lemon juice, freshly squeezed
  • 1 1/2 tbs white vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions:

  1. Whisk together all dressing ingredients in a large bowl until smooth and creamy.
  2. Add cabbage, carrots and onions to bowl. Combine well with dressing.
  3. Cover and refrigerate at least 4 hours or overnight.
  4. Remove from refrigerator, mix well and serve. Drain before serving if desired.

Comments:

- I usually make this in the morning of the day that I am serving it for dinner.  However, it is still very good after a few hours after preparing it.

- This recipe is quite runny. Just mix right before serving. Drain any unwanted liquid if desired.

- I use light buttermilk and regular mayonnaise.
