Creamy Chicken & Rice

Creamy Chicken and Rice, Chicken and Rice CasseroleThis recipe takes only minutes to prepare and is delicious. Serve with rice and steamed broccoli if desired. Everyone in the family loves this meal.

Ingredients:

  • 4-6 chicken breasts, boneless and skinless
    1 can cream of chicken soup
  • 1 can cream of celery soup
    1 8 oz container of sour cream
  • 8 oz cheddar cheese, shredded
    3-4 green onions, white and green part, chopped

  • 2 cups cooked white, brown or wild rice

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine cream of chicken soup, cream of celery soup and sour cream.
  3. Place chicken breasts in a 9" x 13" baking dish.
  4. Spread soup and sour cream mixture over top of chicken breasts.
  5. Sprinkle shredded cheese and green onions on top.
  6. Bake uncovered for 1 1/2 hours.
  7. Serve with cooked rice.

Comments:

- I usually use the reduced fat soups and reduced fat sour cream.

- You can also serve with couscous or over egg noodles.
