Curried Honey Mustard Chicken

1This is a sweet and spicy recipe that is so easy! Marinate the night before and pop it in the oven. It is another one of those recipes that you may not think you will like, but will be surprised of how good it tastes.


  •  4 chicken breasts, boneless and skinless
  • 1/3 cup honey
  • 1/4 cup Dijon mustard
  • 2 tbs butter, melted
  • 1 tbs curry
  • dash of cayenne


  1. Place all ingredients except for chicken in a 9" x 13"  baking dish. Whisk ingredients until well combined.
  2. Add chicken, turn to coat other side.
  3.  Cover dish with aluminum foil and marinate in the refrigerator at least 4 hours or preferably overnight.
  4. Bake in preheated 375 degree oven for 10 minutes. Remove foil and baste with sauce. Cook uncovered for 10 - 20 more minutes until chicken is tender and cooked through.


- You can use chicken parts with bone-in and skin on. However, reduce or omit the butter and increase cooking time.

- Serve with rice such as Jasmine or Basmati.

- I have also served this with couscous.



- Prepare two of these meals at the same time, and before one in the freezer for a meal at a later time.
