Egg McMuffin
Toasted English muffins with egg, ham and melted cheese just like McDonalds. Ok...maybe not exact, but it is an easy breakfast recipe that you can make at home. This recipe is only for one, so make as many as you desire for your family.
Ingredients:
- 1 English muffin
- 1 large or extra large egg
- 1 slice of Canadian bacon
- 1 slice of American cheese
- butter
- cooking spray
- salt and pepper
Directions:
- Preheat oven broiler.
- Split the English muffin apart into two halves. Toast under the broiler or in a toaster until golden brown and nice and crusty. Lightly butter and lay out the muffin halves on a baking/cookie sheet.
- In a skillet on medium heat, cook Canadian bacon until heated through on both sides. Remove from skillet and place a slice of ham on one of the split muffin halves.
- Add butter or coat skillet with cooking spray. Crack an egg into the skillet. As the egg starts to set up (the egg white will turn white), shape the egg into an even round shape about the size of the muffin. (If you have an egg ring or an empty tuna fish can that the top and bottom lids have been removed, you can use that. Just be sure the rings are very well greased or the egg will stick to the edges.) However, I don't find it necessary to use these utensils.
- As the egg is almost cooked on the one side and is "set up", break the yolk with a fork a few times around the inside edges of the yolk. Season lightly with salt and pepper.
- Flip the egg over and cook until your desired doneness. Reshape the egg into the round shape if necessary.
- Place the egg on top of the other muffin half that does not have the ham slice. Add cheese slice on top of egg.
- Once you have prepared all of the muffins, whether one or more, place baking sheet under broiler just until the cheese melts. Place the ham half on top of the egg half and serve.

Variations:
- Replace ham with mild Italian or turkey sausage patties.
- I have used parmesan cheese instead of American and it was very good also.
- As an extra special treat, serve with béarnaise sauce on the side. Knorr's has a dried package mix that you prepare which is actually very delicious. Quite a bit butter though. I will use the reduced fat margarine and it is still very good.
