Honey Roasted Carrots
One way to get my kids to eat carrots is with this simple recipe. Something magical happens when you roast some vegetables such as carrots in the oven. They become much sweeter as you bake them, almost turning them into candy.
Ingredients:
- 1 bag of whole carrots
- 2 tbs of honey
- 1 tbs of olive oil or canola oil
- 2 tsp brown sugar
- salt
Directions:
- Preheat oven to 400 degrees.
- In a 9" x 13" baking dish, spread oil on the bottom.
- Peel the whole carrots trimming only the ends, leaving them whole.
- Lay the carrots in the baking dish and roll them in the oil, until coated with oil.
- Drizzle honey over the carrots.
- Sprinkle carrots with brown sugar. Season lightly with salt.
- Bake for about 45 minutes to an hour until they start to brown. They should be fork tender.
