Mexican Pinwheels
The red, green and black colors of the ingredients make these pinwheels very attractive. They are also very tasty and simple to prepare.
Ingredients:
- 2 - 8 oz pkgs cream cheese, softened
- 1 small jar pimientos, drained
- 1 can pitted black olives
- 4 green onions, white and green part
- 1/3 cup salsa
- 6-8 flour tortillas, medium size
Directions:
- Chop pimientos, olives and green onions and place in medium sized mixing bowl.
- Add softened cream cheese to the bowl.
- Gently combine all ingredients.
- Spread some mixture on 1 tortilla to cover evenly.
- Roll the tortilla and cover with plastic wrap. Repeat process for remaining 5-7 tortilla shells.
- Refrigerate at least 1 hour so the cream cheese mixture will "set up" again.
- After an hour or two, slice tortillas in 1/2" intervals. The ends will be scraps...for taste testing if desired!

- You can also prepare these the day before and slice when ready to serve.
