Mom's Meatloaf
When I was a kid, I remember the smell of the house when my mom was cooking meatloaf. She glazed it with ketchup and topped it off with strips of bacon. This is my version of her meatloaf.
Ingredients:
- 1 1/2 lbs ground beef
- 1/2 lb ground pork
- 1 egg, slightly beaten
- 1/2 cup milk
- 1/2 cup fresh bread crumbs
- 1/2 cup parmesan cheese, grated
- 1 small onion, chopped finely
- 1/4 cup fresh parsley, chopped finely
- 2 tsp worstershire sauce
- 1/2 tsp salt
- 1/4 tsp ground pepper, freshly ground
- 1/8 tsp garlic powder

Topping Ingredients: - 2 slices bacon, uncooked
- 1/4 cup ketchup
- 1 tbs brown sugar
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, combine bread crumbs and milk. Let rest for 5 minutes.
- Add all of the remaining ingredients to the bowl except for the topping ingredients. Combine well with a fork without over stirring.
- Mound and shape the meat mixture onto a baking sheet lined with parchment paper or tinfoil. Or place it into a lightly greased loaf pan if you desire.
- Mix ketchup and brown sugar. Spread ketchup mixture on top of the meatloaf and then add your bacon slices.
- Bake in preheated 350 degree oven for 55 to 60 minutes or until internal temperature is 160 degrees.
Comments:

Try to use fresh parsley if possible. It adds great flavor and
there is a noticeable difference over the dried. Measure the 1/4 cup
first and then chop the parsley.
Tips:
- For the fresh breadcrumbs, place a couple of pieces of bread in a food processor and blend until crumbled finely.
Serving Suggestions:
- Make meatloaf sandwiches with leftover meat using fresh white bread and some sliced red onions. Yum!
