Vanishing Oatmeal Raisin Cookies
Recipe adapted from Quaker Oats
Our family loves the chewiness of these cookies on the inside and the crunchiness on the outer edges. This recipe can be found on the inside lid of the Quaker Oats quick oatmeal containers. One taste and you will understand how they came up with their name.
Ingredients:
- 3 cups Quaker Oats oatmeal (quick or old fashioned), uncooked
- 1 1/2 cups all purpose flour
- 1 cup raisins
- 1 cup (2 sticks) butter, softened or margarine
- 1 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl, beat butter, brown sugar and granulated sugar until creamy.
- Add eggs and vanilla extract to the mixing bowl and beat well.
- In a small bowl, combine flour, baking soda, cinnamon and salt until well combined. Add this mixture to the mixing bowl and mix well.
- Stir in oats and raisins, mixing well.
- On an ungreased cookie sheet, drop by rounded tablespoonfuls at least an inch apart.
- Bake in preheated 350 degree oven for 10 to 12 minutes until golden brown.
- Allow cookies to cool on the cookie sheet and then place on wire cooling rack.
Comments:
- This recipe makes a lot of cookies (4 dozen). You can simply half the recipe if you want to make less.
