Oriental Chicken Salad

Recipe Inspired by Applebee's Oriental Chicken Salad

1When we go to Applebee's for dinner, my favorite salad is the Oriental Chicken Salad. After reviewing and testing many different recipes on the internet, this is my version of the grilled chicken salad. The salad dressing is very close to what you get at the restaurant. This recipe will serve at least 4 side salads.

Ingredients:

  • 1 bunch of Romaine lettuce, chopped
  • 2 chicken breasts, grilled
  • 2 cups of green cabbage or Napa cabbage, chopped
  • 2 green onions, white and green part, sliced thin
  • 1/2 carrot, julienned into thin strips (like matchstick style)
  • 1/2 cup sliced almonds
  • 1/2 cup crispy rice noodles or Chow Mein noodles

  • Dressing Ingredients for Salad:
  • 1/2 cup mayonnaise or light mayonnaise
  • 3 tbs rice wine vinegar or white vinegar
  • 2 tbs honey
  • 2 tbs white sugar
  • 2 tsp Grey Poupon Dijon mustard
  • 1/4 tsp toasted sesame oil

Directions:

  1. Whisk all dressing ingredients until well blended in a small bowl. Cover and refrigerate at least an hour.
  2. In a large salad bowl, add lettuce, cabbage, green onions, followed by almonds and topped off with crispy rice noodles.
  3. Serve dressing on side.

Comments:

-  To save time, use the coleslaw blend with green cabbage, carrots and red cabbage that is already shredded in the package.

Tips:

-  Instead of using grilled chicken, try this simple pan sear method - Pound chicken breasts with a meat mallet until even in thickness, season with salt and pepper, lightly dredge both sides in flour. Pan sear in olive oil on medium high heat. Usually takes about 4-5 minutes per side until cooked through. Then allow to cool before serving in salad.
