Oriental Garden Barley
Adapted from Mother's Quick Cooking Barley
Barley is similar to taste and texture of brown rice. It is a whole grain with a nutlike flavor that is both high in fiber and high in protein. This is a recipe that I found on the side of Mother's Quick Cooking Barley box which I have adapted for our family. It is my favorite quick and easy way of preparing barley and the whole family enjoys.
Ingredients:
- 1 1/3 cups chicken broth
- 2/3 cup quick cooking barley
- 1/2 cup thinly sliced carrots or matchstick carrots
- 1/2 cup thinly sliced mushrooms
- 1/4 cup thinly sliced green onions, white and green part
- 1 garlic glove, minced
- 2 tbs soy sauce
- 1 tbs olive oil
Directions:
- Bring chicken broth to a boil in a medium saucepan.
- Add barley and stir. Reduce heat, cover with lid and simmer for 10 to 12 minutes until the barley is tender.
- While barley is simmering, in a skillet heat olive oil on medium heat.
- Add carrots and garlic. Cook for 1 to 2 minutes.
- Add mushrooms and green onions to skillet and cook for another minute until vegetables are tender.
- Once barley is cooked, drain. Add all of the skillet ingredients to the saucepan with the barley. Stir.
- Cook until heated through. Serve.
