Oriental Garden Barley

Adapted from Mother's Quick Cooking Barley

1Barley is similar to taste and texture of brown rice. It is a whole grain with a nutlike flavor that is both high in fiber and high in protein. This is a recipe that I found on the side of Mother's Quick Cooking Barley box which I have adapted for our family. It is my favorite quick and easy way of preparing barley and the whole family enjoys.

Ingredients:

  • 1 1/3 cups chicken broth
  • 2/3 cup quick cooking barley
  • 1/2 cup thinly sliced carrots or matchstick carrots
  • 1/2 cup thinly sliced mushrooms
  • 1/4 cup thinly sliced green onions, white and green part
  • 1 garlic glove, minced
  • 2 tbs soy sauce
  • 1 tbs olive oil

Directions:

  1. Bring chicken broth to a boil in a medium saucepan.
  2. Add barley and stir. Reduce heat, cover with lid and simmer for 10 to 12 minutes until the barley is tender.
  3. While barley is simmering, in a skillet heat olive oil on medium heat.
  4. Add carrots and garlic. Cook for 1 to 2 minutes.
  5. Add mushrooms and green onions to skillet and cook for another minute until vegetables are tender.
  6. Once barley is cooked, drain. Add all of the skillet ingredients to the saucepan with the barley. Stir.
  7. Cook until heated through. Serve.
