Parmesan Chicken Tenders
This recipe is sure to be enjoyed by everyone in the family. They are tasty and very easy to make.
Ingredients:
- 6 chicken breasts, cut in half lengthwise
1 sleeve of Ritz crackers - 1/2 cup parmesan cheese
- 6 tbs butter, melted
- 2 1/2 tsp Dijon mustard
- 1 tsp parsley flakes
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper, freshly ground
Directions:
- Preheat oven to 400 degrees.
- Crush crackers into fine bits. I usually put mine in a plastic resealable bag to crush. You can also use a rolling pin to assist in crushing.
- In a medium bowl, combine the fine cracker crumbs and parmesan cheese.
- In another medium bowl, combine the remaining ingredients: melted butter, Dijon mustard, parsley flakes, garlic powder, salt and pepper.
- Dip a halved chicken breast in the butter mixture and coat all sides. Then dredge the chicken in the cracker/cheese mixture.
- Place on tin foiled or parchment lined baking sheet.
- Bake in preheated oven for 30 minutes or longer until golden brown.
Comments:
- Since this recipe has quite a bit of butter, serve with steamed vegetables on the side.
- Typically, I prefer freshly grated parmesan cheese. However, the bottled grated cheese is very good in this recipe.
