Roasted Asparagus with Balsamic Butter Sauce
I found this recipe on the internet years ago but don't remember the source. Now it is listed on so many sites because it is that good. It is a very easy recipe that our whole family enjoys.
Ingredients:
- 1 bunch of asparagus
- 2 tbs of butter
- 1 tbs soy sauce
- 1 tsp balsamic vinegar
- kosher salt
- black pepper, freshly ground
- cooking spray
Directions:
- Preheat oven to 400 degrees.
- Break off woody ends of the asparagus.
- Lay asparagus on an ungreased cookie sheet and spray with cooking spray. Season with salt and pepper.
- Bake in preheated 400 degree oven for 12 minutes or until tender. If the asparagus is thick, a longer baking time such as 15 minutes or more may be required. However, watch them after about 12 minutes because if you cook them too long they will become mushy. They should be fork tender but still have a little crisp to them.
- In a small sauté pan, melt butter and cook just until butter starts to brown. Immediately remove from heat and stir in soy sauce and balsamic vinegar.
- Pour balsamic butter sauce over asparagus and serve.

I have steamed the asparagus also and added a little cornstarch to
the sauce to thicken.
- If you don't like using cooking spray, with a pastry brush, lightly coat asparagus with olive oil.
