Simply Baked Potatoes

Simply Baked PotatoesWe like to make a meal out of baked potatoes at our house. We will added reduced fat sour cream, and 2% milk fat cheddar cheese. In addition, we sprinkle chopped green onion and turkey bacon bits.  It makes for a very easy meal.


  • 4 medium baking potatoes, unpeeled
  • 1 tbs of olive oil or canola oil
  • 1 tsp of kosher salt


  1. Preheat oven to 400 degrees.
  2. Scrub the baking potatoes clean and pat dry. Fork each potato about 6 times around each potato.
  3. Add olive oil and salt to a large bowl. Place the potatoes in the bowl and combine the ingredients until the potatoes are well coated.
  4. Place the potatoes directly on the rack in your oven. You may also place on a baking sheet if desired.
  5. Bake for approximately 60 minutes until potatoes are soft to the touch and are fork tender.
