Simply Baked Potatoes
We like to make a meal out of baked potatoes at our house. We will added reduced fat sour cream, and 2% milk fat cheddar cheese. In addition, we sprinkle chopped green onion and turkey bacon bits. It makes for a very easy meal.
Ingredients:
- 4 medium baking potatoes, unpeeled
- 1 tbs of olive oil or canola oil
- 1 tsp of kosher salt
Directions:
- Preheat oven to 400 degrees.
- Scrub the baking potatoes clean and pat dry. Fork each potato about 6 times around each potato.
- Add olive oil and salt to a large bowl. Place the potatoes in the bowl and combine the ingredients until the potatoes are well coated.
- Place the potatoes directly on the rack in your oven. You may also place on a baking sheet if desired.
- Bake for approximately 60 minutes until potatoes are soft to the touch and are fork tender.
