Simply Roast Chicken

1Sometimes just the simplest recipes can be very good... sometimes it is all about the technique.  This recipe will explain how to roast a chicken with just a few simple ingredients. The chicken turns out to be a beautiful golden brown on the outside and fork tender on the inside. Once you master this recipe, you can add any additional seasonings as you desire. However, try it once as is, you will see that it does not require much for a tasty roast chicken.

Ingredients:

  • 4 to 5 lb whole roasting chicken
  • 2 tbs olive oil or butter
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground.
  • 3/4 cup white wine or low sodium chicken broth (to create a pan sauce)

Directions:

  1. Wash chicken and pat dry with paper towel. Make sure to remove the giblets. (I don't know about you, but I forgot to do this once! Ooops!)
  2. Brush olive oil or melted butter all over entire chicken including the bottom.
  3. Sprinkle salt and pepper on the outside and inside of the chicken.
  4. Tuck wings under the chicken.
  5. Bake 15 minutes on 450 degrees on a rack set in a roasting pan. Be sure to use a rack because you want the air to circulate all around the chicken. A "V" shaped rack is ideal for this cooking method.
  6. Reduce heat to 400 degrees and bake an additional 60 minutes until internal temperature is 170 degrees.
  7. Tilt chicken to pour juices out of cavity, if red...return to oven and cook an additional 5 min, recheck temp.
  8. Use a fat separator to remove the fat from the juices in the baking pan. You can also use a piece of bread to absorb the fat.
  9. Deglaze the pan by adding white wine and scraping up those wonderful bits on the bottom. Add back in the pan juices after fat has been removed. Cook on stove top until reduced by half. This does not make a lot of gravy but enough to spoon over your chicken servings for additional great flavor.

Comments:

- You will be tempted to turn down the heat in the first 15 minutes because it is such a high heat at 450 degrees. You will hear a lot of crackling noises going on in the oven. Try not to touch, as the high temperature really helps to keep the juices in the chicken for a moist and tender meal.

Tips:

- When you place the chicken in the oven, throw some pierced baking potatoes on another rack to simplify your meal.
