Simply Roasted Asparagus

1Another recipe from our simply recipes that is very good with just a few ingredients. The kids favorite way of eating asparagus is when I roast them in the oven.

Ingredients:

  • 1 bunch of asparagus, approx 2 lbs
  • 1 1/2 tbs olive oil
  • kosher salt
  • black pepper, freshly ground

Directions:

  1. Preheat oven to 400 degrees.
  2. Break off the woody ends of the asparagus.
  3. Lay the asparagus in a single layer on a baking/cookie sheet pan.
  4. Sprinkle the oil over the asparagus and roll them in the oil until coated.
  5. Season with salt and pepper as desired.
  6. Bake in preheated 400 degree oven for 12 minutes or until tender. If the asparagus is thick, a longer baking time such as 15 minutes or more may be required. However, watch them after about 12 minutes because if you cook them too long they will become mushy. They should be fork tender but still have a little crunch to them.

- None

Tips:

- Bend the asparagus near the bottom end and it will naturally snap off where it should.

- If the asparagus is thick, use a vegetable peeler to peel the bottoms.

- Variations:

- For a quick and special sauce to compliment the asparagus, mix equal parts of sour cream and mayonaise together (such as 2 tbs of sour cream and 2 tbs of mayonaise). Dollop on the side or stream across the middle of the asparagus. I learned this sauce recipe from a local restaurant that I had  visited many years ago.

- Use garlic salt instead of kosher salt.

- Sprinkle slivers of garlic over asparagus before roasting.

- Sprinkle sesame seeds over asparagus before roasting.
