Soft and Chewy Caramels
These little bite size pieces of caramel just melt in your mouth. As the title says, "soft and chewy" with a buttery taste. Yum!
Ingredients:
- 1 cup butter
- 1 cup light or dark corn syrup
- 1 lb light brown sugar
- 1 14oz can sweetened condensed milk
- 1 tsp vanilla extract
Directions:
- Except for vanilla, combine all of the ingredients in a heavy bottomed saucepan. Stir until smooth.
- Cook over medium heat, stirring constantly with a wooden spoon until liquid comes to a boil. Continue to cook, stirring often until the candy reaches a temperature of 235 degrees. (Takes about 20 - 30 minutes).
- Continue to cook for an additional couple minutes.
- Remove from heat, add in vanilla and stir until no longer bubbling.
- Without scraping bottom of saucepan, pour into a buttered 8" x 8" pan or "13 x 9" pan.
- Allow to sit at room temperature for quite a few hours until completely cooled. These will be hot for a long period of time.
- Cut with a buttered knife into candy size pieces and wrap in waxed paper, plastic wrap or cellophane.

You will need to use a candy thermometer to achieve the proper
temperature.
Tips:
- To test the accuracy of your candy thermometer, place it in a saucepan of boiling water and it should read 212 degrees. If it is off by a degree or two, adjust your recipe accordingly.
