Southwestern Salad
Inspired by McDonald's Southwestern Salad
A very easy and tasty salad that is great served with quesedillas or enchiladas. Add grilled chicken to make a complete meal.
Ingredients:
- 6 to 8 cups of mixed salad greens
- 1 cup of black beans, canned (rinsed and well drained)
- 1 cup of frozen corn, cooked as per package (well drained)
- 1 cup of grape tomatoes
- 1 cup of crispy salad tortilla strips or tortilla chips slightly crushed
- 4 oz of Monterey Jack cheese, shredded
- 2 green onions, white and green part, sliced thin
- 1/2 carrot, julienned into thin strips (like matchstick style)
- 10 cilantro leaves
- 1 lime, cut into 8 wedges

Dressing Ingredients for Salad: - store bought Southwestern salad dressing
- or
- Ranch dressing with a squeeze of lime and a couple of dashes of hot sauce
Directions:
- In a large salad bowl, add mixed salad greens, black beans, corn, carrots, tomatoes, green onions, cilantro followed by cheese and topped off with crispy tortilla strips.
- Serve with lime wedges and dressing on the side.
Comments:

If you can't find crispy tortillas strips, use tortilla chips broken
into small pieces if desired.
- I like to use a mix of Monterey Jack cheese with Cheddar cheese. Use Pepper Jack cheese if you like it spicy.
- You can use salad greens such as Romaine and Iceberg lettuce.
- Use fire roast corn if you can find it.
- Add fresh sliced avacados if desired.
- Add sliced jalepenos to spice things up!
