Southwestern Salad

Inspired by McDonald's Southwestern Salad

1A very easy and tasty salad that is great served with quesedillas or enchiladas. Add grilled chicken to make a complete meal.

Ingredients:

  • 6 to 8 cups of mixed salad greens
  • 1 cup of black beans, canned (rinsed and well drained)
  • 1 cup of frozen corn, cooked as per package (well drained)
  • 1 cup of grape tomatoes
  • 1 cup of crispy salad tortilla strips or tortilla chips slightly crushed
  • 4 oz of Monterey Jack cheese, shredded
  • 2 green onions, white and green part, sliced thin
  • 1/2 carrot, julienned into thin strips (like matchstick style)
  • 10 cilantro leaves
  • 1 lime, cut into 8 wedges

  • Dressing Ingredients for Salad:
  • store bought Southwestern salad dressing
  • or
  • Ranch dressing with a squeeze of lime and a couple of dashes of hot sauce

Directions:

  1. In a large salad bowl, add mixed salad greens, black beans, corn, carrots, tomatoes, green onions, cilantro followed by cheese and topped off with crispy tortilla strips.
  2. Serve with lime wedges and dressing on the side.

Comments:

- If you can't find crispy tortillas strips, use tortilla chips broken into small pieces if desired.

- I like to use a mix of Monterey Jack cheese with Cheddar cheese. Use Pepper Jack cheese if you like it spicy.

- You can use salad greens such as Romaine and Iceberg lettuce.

- Use fire roast corn if you can find it.

- Add fresh sliced avacados if desired.

- Add sliced jalepenos to spice things up!
