Sunshine Broccoli Salad

1This recipe has been around for many decades and sometimes you will see it at potlucks. There are many different variations, however, this is the basic recipe. Feel free to change it up any way you like it.

Ingredients:

  • 2 heads of broccoli (about 6 cups), chopped into bite size pieces using flowerets only
  • 8 slices of bacon, fried crisp and crumbled
  • 1/2 cup red onion, chopped
  • 1/2 cup golden raisins or regular raisins
  • 1/4 cup roasted sunflower seeds

Dressing Ingredients:

  • 1 cup of light or regular mayonnaise
  • 1/4 cup sugar
  • 2 tbs white vinegar

Directions:

  1. In a large bowl, whisk together the dressings ingredients until well combined.
  2. Add broccoli, red onion, and raisins to the dressing mixture. Combine well.
  3. Cover and chill at least 4 hours, but best overnight.
  4. Right before serving, stir in crumbled bacon and sesame seeds and serve.

Comments:

- I prefer golden raisins over regular raisins.

Tips:

- If you like your broccoli less crunchy, blanch the broccoli in boiling water until desired crispness. Be sure to leave some crunch to the broccoli. Drain and cool completely before adding to the dressing mixture. Use a salad spinner to help drain the broccoli if desired.

Variations:

- Replace raisins with a cup of halved red grapes.

- Use Craisins instead of raisins.

- Replace sunflower seeds with toasted slivered almonds.

- Add shredded cheddar cheese.
