Recipe
Courtesy Katrinka Sloan
My sister-in-law, Katrinka, has a lot of great recipes that are quick and delicious. This soup is a thick soup with lots of great flavor.
Ingredients:
- 1 15oz can black beans, rinsed and drained
- 1 14oz can chicken broth
- 1 16oz can refried beans
- 1 1/2 cups frozen corn
- 3/4 cups chunky salsa
- 1/4 cup water
-
3/4 cups of boneless skinless chicken, cooked and chopped or shredded
2 cups shredded cheddar cheese, divided - Tortilla chips as desired
Directions:
- In slow cooker combine first 6 ingredients: black beans, chicken broth, refried beans, corn, salsa and water. Cook on low for 3 - 4 hours.
- Add chicken until heated through.
- Add 1 cup of shredded cheese until melted.
- Crush tortilla chips in bottom of bowls.
- Place soup on top of chips and top each bowl with remaining cheese.
Comments:
-
Toppings for soup: Sour cream, onions such as green onions, black
olives, chopped green chilies, fresh chopped cilantro, (whatever you like).
- You can also do this on the stove top cooked on low.
- If the soup is too thick, add a little extra chicken broth or water.
Tips:
- Can double recipe for large group.
