White Chocolate & Macadamia Cookies

Ingredients:

  • 2 1/4 cups all purpose flour
  • 1 cup (2 sticks) butter, softened
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups white chocolate chips
  • 1 cup macadamia nuts, coarsely chopped

Directions:

  1. Preheat oven to 375 degrees.
  2. In a small bowl, combine flour, baking soda and salt.
  3. In a mixing bowl, beat butter, granulated sugar, brown sugar and vanilla extract until creamy.
  4. Add eggs one at a time, beating until well combined after each egg.
  5. Add flour gradually, beating until well combined.
  6. Stir in white chocolate chips and nuts.
  7. Drop by rounded tablespoon onto ungreased baking sheet.
  8. Bake for 9 to 11 minutes until golden brown.

Comments:

- To make a cookie pan version:

Prepare dough as above and spread into a greased 15 x 10 jelly roll pan. Bake for 20 to 25 minutes until golden brown.
