Breakfast Puffs
These are so easy and yet so yummy. They are filled with cheddar cheese and ham that melt in your mouth. This is a great recipe that you can bake the night before, refrigerate and then warm the next morning.
Ingredients:
- Base Ingredients:
- 1 egg, lightly beaten
- 3/4 cup of flour
- 3/4 cup of milk
- 3/4 tsp baking powder

Ham and Cheddar Variation:
1/2 tsp dried mustard - 4 oz cheddar cheese, shredded
- 4 oz Canadian bacon or cooked ham, diced small
- 2 green onions, white and green part, chopped finely
Directions:
- Preheat oven to 375 degrees. If using a dark pan, decrease temperature to 350 degrees.
- Grease a 24 cup mini muffin pan.
- In a large bowl, blend together the flour and baking powder. Whisk in the egg and the milk.
- Add the dry mustard, Canadian bacon (or cooked ham) and cheese to the mixture.
- Let stand for 10 minutes.
- Gently stir the batter again. Using a teaspoon, drop the batter into the mini-muffin cups.
- Sprinkle the finely chopped green onions on top of the batter in the muffin pan.
- Bake for 20-25 minutes until they are puffed and golden.

I use 1% milk. You can use whatever milk you have on hand.
- This recipe is so versatile and you can have so many different flavor combinations. Mix together the base ingredients as above and then add what ever variation you like.
- I make Pizza Puffs using the base of this recipe with provolone cheese and pepperoni.

- Crumbled bacon, Swiss cheese, a few dashes of nutmeg.
- Sausage and cheddar cheese.
