Breakfast Puffs

Breakfast PuffsThese are so easy and yet so yummy. They are filled with cheddar cheese and ham that melt in your mouth. This is a great recipe that you can bake the night before, refrigerate and then warm the next morning.

  • Base Ingredients:
  • 1 egg, lightly beaten
  • 3/4 cup of flour
  • 3/4 cup of milk
  • 3/4 tsp baking powder

  • Ham and Cheddar Variation:

    1/2 tsp dried mustard
  • 4 oz cheddar cheese, shredded
  • 4 oz Canadian bacon or cooked ham, diced small
  • 2 green onions, white and green part, chopped finely

  1. Preheat oven to 375 degrees. If using a dark pan, decrease temperature to 350 degrees.
  2. Grease a 24 cup mini muffin pan.
  3. In a large bowl, blend together the flour and baking powder. Whisk in the egg and the milk.
  4. Add the dry mustard, Canadian bacon (or cooked ham) and cheese to the mixture.
  5. Let stand for 10 minutes.
  6. Gently stir the batter again. Using a teaspoon, drop the batter into the mini-muffin cups.
  7. Sprinkle the finely chopped green onions on top of the batter in the muffin pan.
  8. Bake for 20-25 minutes until they are puffed and golden.
