  1. Preheat oven to 375 degrees. If using a dark pan, decrease temperature to 350 degrees.
  2. Grease a 24 cup mini muffin pan.
  3. In a medium bowl, blend together the flour, and baking powder. Whisk in the egg and the milk.
  4. Add the cheese, pepperoni, Italian seasoning and garlic salt to the mixture.
  5. Let stand for 10 minutes.
  6. Gently stir the batter again. Using a teaspoon, drop the batter into the mini-muffin cups.
  7. Bake for 20-25 minutes until they are puffed and golden.
  8. Remove from the oven and sprinkle 1 tbs of chopped basil on top of the puffs.
  9. Add the remaining 1 tbs basil to the marina/pizza sauce. Serve.

- I use 1% milk. You can use whatever milk you have on hand.

- The marinara sauce can be replaced with your favorite pasta sauce or pizza sauce. Our favorite marinara sauce is Barilla Marinara with Imported Olive Oil. It is the most fresh tasting marinara sauce we have ever had.

- This recipe is so versatile and you can have so many different flavor combinations. Mix together the base ingredients as above and then add what ever variation you like.

- This is a great recipe that you can make ahead of time and warm right before serving.

- I make Breakfast Puffs using Canadian bacon and cheddar cheese. A great quick breakfast.
