Refried Bean Dip
If it is a family gathering and the theme is Mexican, my mother-in-law always wants me to make this dip. It is not the typical refried bean dip that is cold. It can be made ahead of time and popped in the oven right before serving.
Ingredients:
- 2 16-oz cans refried beans
- 1 cup sour cream
- 1 pkg taco seasoning mix
- 1 4-oz can diced green chilies , drained
- 8 oz longhorn style cheese or mild cheddar cheese, shredded (makes 2 cups)
Directions:
- Preheat oven to 350 degrees.
- Combine first 3 ingredients and spread in shallow baking dish.
- Sprinkle green chilies on top and then sprinkle cheddar cheese.
- Bake in preheated oven until cheese is completely melted and bubbly.
- Serve with Tortilla chips.

This does not have to be baked and can be served cold also.
- You can use it for the base of your 7 layer dip.
